Bai Mu Dan “White Peony ” is a white tea that is produced in Zhenghe county, northern Fujian, and Fuding county, in eastern Fujian. Bai Mu Dan pluckings consist of one unopened bud and two young leaves from the Da Bai camellia varietal. Although this tea is considered a grade below Baihao Yinzhen “silver needle”, which is solely made from tea buds, Bai Mu Dan has a more robust aroma and deeper flavor. The first true tea I had was aged Bai Mu Dan, so it is very close to my heart.
The wet leaves have a deep sugary, herbal medicinal smell. The flavor has a sweet top note drifting into a mellowing herbaceous dream, followed by a buttery texture that leaves a floral bouquet in the throat.
