Tieguanyin, literally “Iron Guan Yin” or “Iron Goddess of Mercy”, is a classic cultivar native to Anxi County, Fujian. The young, asymmetrical leaves of this cultivar are peach in color and curl downward, otherwise known as “Red Heart Slant Tail” 紅心歪尾, slowly fading to green as the leaves mature. This shrub is naturally short in stature reaching to about knee height, making the harvest very physically demanding. Tieguanyin has historically been oxidized much further than the greener Tieguanyin of modern times and demand. There are very few Masters left who process this tea using traditional methods.
These tightly rolled leaves are of light to medium oxidation. The leaves smell of cream and sweet grass, producing a buttery textured liquor that has a strong presence in the throat. This extremely cozy brew is soft, nutty, and floral.
